George Winston?!!?!1! You are perhaps the only other person I know who's even heard of George Winston!

You may also like Michael Hedges, although he's a guitarist. I discovered them both on a Windham Hill sampler LP (yeah, LP, as in vinyl) in the '80s. Check him out:

Hee! Caveat: I only learned of him on Thursday while listening to one of Margaret Throsby's interviews on Classic FM. The interviewed person chose "Where are you now?" from the Summer album, and I swooned. I then looked him up on Myspace and found he did faster, more 'jangly' pieces, so restricted the pool somewhat. I'm a big fan of minimalist mediative music.
